Some of my all time favorites:
BioShock, Dead Space, Knights of The Old Republic 1 +2

Some others I like:
Fallout 3, Dead Rising(somewhat sci-fi), Brute Force, Alot of Star Wars
games.

Can be either 360 or PC, please.

Also, Don't suggest Mass Effect, I just couldn't get into that game for
whatever reason.

Now you're talking ! Fallout 3 is a great game, don't you think ? I have it on PC DVDs and XBOX 360 ! You should try these 2 amazing games, they're not sci-fi per se, more of an "adventure" but interesting anyway:
